Pesto


When Barilla asked me to create a simple, one-pan recipe for this time-strapped millennial, I was up for the challenge. It can be such a struggle to prepare a healthy and nutritious dinner on demand most nights because, like many of you, I’m juggling a full-time job, two little kids and trying to keep up with my blog. Dinner often takes a back seat to all my other priorities.

My kids are picky when it comes to their proteins. Luckily, they will eat turkey meatballs. Since it’s National Meatball Day on March 9th, I thought it would be fun to come up with a recipe utilizing the Cooked Perfect Meatballs my kids already love. This meatball French bread pizza is a perfect appetizer or dinner. It is super easy to make and it’s ultra-tasty.

This is such an easy meal to make any night of the week and I just love pesto gnocchi. I have made homemade gnocchi in the past, but it is very time-consuming. However, making fresh basil pesto is actually really easy to do. It’s the perfect way to make an easy meal that still tastes super fresh.
