Ingredients
For the Filling

1 large yellow onions, thinly sliced
2 tablespoons unsalted butter
1 tablespoon olive oil
1 teaspoon sugar (optional, helps with caramelizing)
Salt and pepper to taste
4 large eggs
1 cup heavy cream or half and half
1 cup grated Gruyère cheese
1 teaspoon fresh thyme or ½ teaspoon dried thyme

For the Crust

Store bought pie crust or puff pastry (thawed if frozen)
Or go crustless and simply grease the muffin tin well

Instructions
1. Caramelize the Onions

Heat the butter and olive oil in a skillet over medium low heat.
Add sliced onions and a pinch of salt. Cook slowly for 20 to 25 minutes, stirring occasionally.
Add sugar halfway through to speed up caramelization.
Once deep golden brown, remove from heat and let cool slightly.

2. Prepare the Crust

Preheat oven to 375°F (190°C).
Lightly grease a regular or mini muffin tin.
Use a cookie cutter or the rim of a glass to cut small rounds of pie crust or puff pastry.
Press dough into each muffin cup.
If making a crustless version, simply grease the pan generously and skip this step.

3. Make the Egg Mixture

In a bowl, whisk together the eggs, heavy cream, salt, pepper, thyme, and nutmeg if desired.

4. Assemble

Place one teaspoon of caramelized onions in each muffin cup.
Sprinkle Gruyère cheese over the onions.
Pour the egg mixture on top, filling each cup about three quarters full.

5. Bake

For mini muffin tins, bake 15 to 18 minutes.
For regular muffin tins, bake 22 to 25 minutes.

Quiche Freezing and Reheating Tips

To reheat:
