Side Dishes


About a year ago, my hubby decided to make grilled sweet potato wedges with cilantro and lime dressing as one of our side dishes for a family party. I love grilled vegetables. Actually, I like all grilled food, but especially grilled veggies. His mom and sister were visiting from California so he created a mini family BBQ for them. Although he made a bunch of yummy food, the grilled sweet potatoes are the stand-out dish that his mom is still talking about.

Remember as a kid, when you thought Brussels sprouts were totally disgusting? Well, at least I did. I remember watching cartoons and tv shows as a kid, they’d talk about how disgusting Brussels are. Then I grew up, learned how to roast them to perfection, and realized Brussels sprouts are one of my favorite vegetables. I especially love Brussels with balsamic glaze.

Cauliflower is one of my favorite vegetables. I love it roasted, I love it steamed, and I love it as cauliflower cheddar bites and cauliflower breadsticks. There are so many amazing things you can do with cauliflower to lighten up a meal or make it low-carb. That’s why I decided to try making this cauliflower hummus recipe.

For me, Thanksgiving dinner is really about the sides. The turkey gets all the hype, but I could not care less about the bird (even though my hubby has a magical ability to make it really tasty). I’m a side dish gal all the way. As a kid, I would fill my plate with mashed potatoes (extra butter) and the fresh from the oven, still warm, dinner rolls. Yes, quite the healthy dinner plate.

Do you have a favorite holiday side? My family loves it all, but sweet potatoes are always served at our holiday gatherings. This year, we wanted to try something new, so I made these roasted sweet potato stacks. They are a prettier way to serve sweet potatoes, and I personally think even tastier. These turned out even better than I expected because they are pretty and delicious.
