This is the Best Oatmeal Chocolate Chip Cookies Recipe

It’s the end of January – which is also oatmeal month, so I had to share the best oatmeal chocolate chip cookies recipe. I used this oatmeal cookie recipe as the base for a lot of other recipes, including these oatmeal scotchies. If you don’t like chocolate, you can replace the chocolate chips with nuts, raisins, cranberries, white chocolate, peanut butter, or butterscotch chips.
I love this recipe so much because it is so versatile and creates chewy oatmeal cookies. This recipe is super easy to make too. The ingredients are really straight forward. It has old fashion rolled oats, flour, butter, light brown sugar, vanilla extract, an egg, baking powder and soda, and salt. This is really a simple oatmeal cookie recipe.

The Best Oatmeal Chocolate Chip Cookies

Ingredients
- 3/4 cup butter at room temperature
- 1 1/2 cup brown sugar
- 1 egg
- 2 tsp vanilla extract
- 1 1/2 cup flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 2 1/4 cup old fashioned oats
- 1/2 tsp salt
- 1 1/2 cups chocolate chips (I used semi-sweet)
Instructions
- Line your baking sheet with parchment paper and preheat your oven to 350°F.
- Use a stand mixer and add butter and brown sugar to the bowl. Set it to medium speed and beat until the mixture is fluffy (about 2 minutes).
- Add the egg and vanilla. Beat for another minute.
- Add the flour to the bowl and sprinkle the baking powder, baking soda, and salt over the top. Mix until combined.
- Then, mix in the oats and then add the chocolate chips. Mix until combined.
- Use a spoon and your hands to roll out 1.5 - 2 inch dough balls. The mixture will be a little sticky, but not too much that you can roll out balls.
- Place the dough balls 2 inches apart on the baking sheet. Bake for 10-14 minutes until the centers set and the edges begin to brown.
