Apartheid

Since it is Black History month, it is the perfect time for me to share my experience at the Apartheid Museum. I also talked about my trip to South Africa here, in case you want to know more about it. Nearly 3 months since I came back from South Africa, I’m still not the same. That trip truly opened my eyes to the ever-present inequalities in society on a global scale.

It’s almost back to school time and it happens to be National Zucchini Day, so I wanted to whip up a quick, easy, and healthy snack that is perfect for afterschool. These zucchini Parmesan crisps are so simple to make and totally kid-friendly.
